Right option is (c) Dextransucrase

Explanation: Dextran may be produced by the action of dextransucrase enzyme. Leuconostoc mesenteroides found as a slime on damaged cane and beet tissue helps in production dextran, when the process has been delayed during hot and humid climate. Invertase is an enzyme which is obtained from to degrade sucrose to glucose and fructose. Rennet is proteolytic enzyme which hydrolyzes casein in milk and is used in cheese making. β – amylase is used in the production of maltose syrups from barley.
