Correct choice is (c) transferase

For explanation I would say: Alcoholyses allows the exchange of alcohol between esters and alcohols by use of transferase enzyme. Dextransucrase can be used to produce dextran from sucrose. Fructosyltransferases synthesize compounds such as sucrose-6-acetate, xylosucrose and neosugar. Rennet is a protease enzyme and which is used cheese making process.
